Luscious Lemon Poppy Seed Cake: A Citrus Lover’s Delight

   Ingredients:

– 2 cups all-purpose flour
– 1 and 1/2 teaspoons baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1 tablespoon poppy seeds
– 1 cup unsalted butter, softened
– 1 and 1/2 cups granulated sugar
– 3 large eggs
– Zest of 2 lemons
– 1/4 cup fresh lemon juice
– 1 teaspoon vanilla extract
– 1 cup plain yogurt or sour cream

   For the Lemon Glaze:

– 1 cup powdered sugar
– 2 tablespoons fresh lemon juice

  Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or a 9-inch round cake pan.

2. In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and poppy seeds. Set aside.

3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

4. Beat in the eggs, one at a time, ensuring each is well incorporated.

5. Mix in the lemon zest, lemon juice, and vanilla extract until the batter is well combined.

6. Gradually add the dry ingredients to the wet ingredients, alternating with yogurt or sour cream. Begin and end with the dry ingredients, mixing until just combined after each addition.

7. Pour the batter into the prepared pan and spread it evenly.

8. Bake in the preheated oven for 40-45 minutes (for the loaf pan) or 25-30 minutes (for the round cake pan) or until a toothpick inserted into the center of the cake comes out clean.

9. While the cake is still warm, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.

10. Poke several holes on the top of the warm cake using a toothpick or skewer. Drizzle the lemon glaze over the cake, allowing it to seep into the holes and coat the surface.

11. Let the cake cool completely in the pan before removing and slicing.
